この場合の「移動」は I'm catching a plane/train/taxi で表現すればいいと思います。
文のほかのところは so I'll be offline で言えます。
1) Can we Skype in the afternoon?
2) No. I'm catching a plane so I'll be offline for a while.
「移動中で連絡が取れなくなる」も一緒に言いたいなら I'm catching a plane so I'll be offline and you won't be able to contact me で表現することができます。
